Choc Blueberry Brownies

Warning: the following recipe is highly addictive! Don’t say you weren’t warned!

They are dairy free, egg free and delicious.

Choc Blueberry Brownies

Ingredients

100g Almonds (or almond meal for non Thermomix users)
100g White spelt flour
1 tsp Alum free baking powder
2 tsp Apple cider vinegar
2 tsp Vanilla paste
175g Pure maple syrup
120g Coconut milk
90g Macadamia oil
50g Frozen blueberries (plus an extra handful to top)
30g Cacao

Thermomix
1. Pre-heat oven to 180 degrees Celsius.
2. Add almonds to bowl and mill 10sec/ sp9.
3. Add remaining ingredients and mix 20sec/ sp5.
4. Pour mixture into a lined slice tray and top with remaining blueberries.
5. Cook for 45 minutes.

Traditional
*Mill almonds in a high speed blender/ processor OR use ready made almond meal.
1. Pre-heat oven to 180 degrees Celsius.
2. Add all ingredients to a food processor and mix until mixture is smooth.
3. Pour mixture into a lined slice tray and top with remaining blueberries.
4. Cook for 45 minutes.
