Kids’ choice – Sausage rolls

Sausage rolls are a fun way to sneak in loads of veggies for your kids. They are a great party or finger food and are easy to eat on the go. Homemade sausage rolls are great and always taste so much better than the ones bought from a bakery or the freezer section of the supermarket. Homemade usually means you can avoid nasty additives and you are able to make sure they contain good quality and nutritious ingredients.

Kids’ choice sausage rolls

Ingredients
150g Bread – cut into cubes (I used homemade sourdough bread. It’s best to use a crusty loaf or stale bread for this)
1 Carrot
1 Zucchini
1 Handful of mushrooms
1 clove garlic
1/2 handful fresh spinach
2 sprigs of parsley
1TBS Vital Veggie powder (from Nutra Organics)
2TBS Ketchup (I use homemade – recipe on Quirky Cooking blog. You can use a good quality tomato sauce in place of this. Look for organic and additive free)
2 tsp Dijon mustard
400g mince
1 packet spelt puff pastry/ 3 sheets butter puff pastry or rough puff pastry from the Everyday Cookbook

Thermomix Instructions

1. Pre-heat oven to 180C
2. Place bread in thermomix speed 9/ 5 seconds and set aside.
3. Place carrot, zucchini, mushrooms, garlic, spinach and parsley speed 5/ 3 seconds.
4. Add vital veggie powder, ketchup, mustard, mince and reserved bread crumbs to bowl and mix speed 5/ 5 seconds.
5. Divide the mince mixture onto the rolled out pastry, roll up and cut into mini sausage rolls. Brush with milk.
6. Bake for around 30 minutes or until pastry is golden and they are cooked through.

Traditional

1. Pre-heat oven to 180C
2. Place bread in food processor and process until crumbs are formed. Remove and set aside.
3. Attach a grater attachment and process carrot, zucchini, garlic. Remove attachment.
4. Add spinach (roughly torn), parsley (roughly chopped), vital veggie powder, ketchup and process until chopped finely.
5. Add mince and bread crumbs and process until combined but not until it’s a paste.
6. Divide the mince mixture onto the rolled out pastry, roll up and cut into mini sausage rolls. Brush with milk.
7. Bake for around 30 minutes or until pastry is golden and they are cooked through.
