Pumpkin and Root Veg Soup


This weekend just been we were lucky enough to enjoy a (very brief) camping trip. It certainly was a whirlwind trip but we managed to fit in lots of fishing and beach visits (no swimming though, too cold for that). I haven’t been camping for years and I have got to say I feel we really weren’t as prepared as I would have liked. Like, for example, we forgot a light! Luckily, we went with my Mum and Dad who are seasoned campers and have a camper trailer that is something like the Taj Mahal.

The camp ground was 4 hours from home and I must say the two boys travelled very well and I was quite prepared for the car trip (more on this in the next post). I am mad on routines and made sure bottles and lunch stops were made at the right time. We got home quite late Sunday evening though and I needed to make something quick and decent for dinner (thank goodness for Thermie!!) So, yet another pumpkin-tumeric creation was born… maybe next recipe will have different ingredients! Anyway, enjoy! 🙂

Pumpkin and Root Veg Soup

1 Onion

1 Clove Garlic

1 generous piece of Tumeric

1 Celery Stalk (with leaves and all)

Chop 3 Seconds Speed 5

30g Butter

Saute for 3 minutes/ Varoma/ sp 1

500g Pumpkin

200g Sweet Potato

1 Carrot

1 Large Potato

Chop 15 seconds/ Speed 7

600mL Water

1 TBS Vege Stock Concentrate

Cook 20 minutes/ 100 degrees/ Speed 1

50g Coconut cream

Blend 1 Minute – increasing speed from 1 to 9 until smooth
